Our flagship store is dedicated to high-end, premium ramen—an experience you can only find here. We meticulously balance our broth using a blend of Kuroge Wagyu beef, black pork, free-range chicken, and the finest dried sardines, creating an unparalleled depth of flavor. Toppings Include:Char siu made from black pork & Hayashi SPF pork House-ground black pork wontons Rare cut “Misuji” Wagyu beef char siu Premium seaweed sourced from a historic wholesaler in Omori We also serve rice directly sourced from a farmer in Uonuma, cooked in an earthenware pot for the perfect texture and flavor. Our signature Fish Rice features top-quality bluefin tuna, specially sourced from the owner’s family’s fish shop. Additionally, we offer limited-edition ramen on an irregular basis, featuring exclusive flavors available only at this location.

Aomugi is built on the concept of a training ground for future ramen chefs—a place where young culinary talents refine their skills, overcome challenges, and work together to build a restaurant of their own. Broth Variations:"Chosei" (Clear Broth) – A refined broth made by simmering dried sardines from all over Japan, with a unique touch of tea leaves for added depth. "Kossari" (Rich & Clear Broth) – A well-balanced blend of chicken, pork, and seafood, simmered carefully for a deep yet smooth flavor. Our dipping noodles feature original elements such as deep-fried vegetables, adding an innovative twist to the traditional ramen experience. Additionally, the young chefs in training develop and serve their own limited-edition ramen from time to time, creating unique and exciting flavors for customers to enjoy.
Commitment of Sister Store: Homemade Ramen Muginae Muromachi
The concept is an urban-style location where you can casually experience the atmosphere of Muginae. Rather than being just a copy, it offers exclusive menu items available only here. Unusually for a shop located inside a facility, the soup is prepared in-house, centered on Nagoya Cochin and Okukuji Shamo chicken, with various ingredients carefully balanced to create depth of flavor. The tsukemen features house-made noodles crafted from 100% Hokkaido wheat flour, designed so you can enjoy a variety of flavor changes as you eat. Various limited-edition noodle dishes are also offered on an irregular basis.
